My garden saskatoon bushes are producing and I am enjoying their sweet flavourful berries.
Wild saskatoon bushes can still be found across the prairies, however many people grow their own in backyard gardens or go to U-pick farms for their saskatoons. Mmmm—this tart is bursting with the fresh flavour of saskatoons!
Saskatoon tart
1 1/2 cups flour
1 cup finely chopped almonds
1/2 cup white sugar
2/3 cup cold butter
1 egg
4 cup saskatoons, divided
1 Tbsp. corn starch
2 Tbsp. sugar
1/4 tsp. nutmeg
Combine the flour, almonds and sugar in a bowl. Cut in butter with pastry blender until crumbly. Mix in egg. Press 1 1/2 cups of the dough mixture in an even layer in the bottom and up the sides of a lightly greased 10-in. tart pan with removable bottom or spring form pan. Take 2 cups of the saskatoons and crush them with the cornstarch, sugar and nutmeg. Spread mixture evenly onto the crust; scatter the remaining 2 cups of berries on top. Sprinkle the remaining topping over the berries. Bake at 400° for 40-45 minutes until bubbly and lightly browned. Cool and remove from pan.
