Rosemary is one of my favorite herbs. I grow it in my garden every year and if I chop onions I remove the onion smell from my hands by running them through a stem of rosemary. Ancient Greek students wore rosemary garlands in their hair to improve memory. Placed under your pillow it is said to prevent bad dreams. For centuries it was used in wedding bouquets as it is a symbol of fidelity, love and friendship. My favorite use for it is in soups and stews.

Rosemary has a pungent flavour and should be used sparingly when cooking.

 

Chicken Stew

 

4 chicken breasts

 

2-3 Tbsp. cooking oil

 

1/4 cup of flour

 

1 large onion, finely chopped

 

2 cloves garlic, minced

 

4 medium carrots, peeled and sliced

 

2 ribs of celery, sliced

 

2-4 cups baby potatoes, cut in halve

 

1 small package fresh mushrooms, sliced

 

2 cups chicken broth

 

1/4 cup white wine

 

2 Tbsp. minute tapioca

 

1 Tbsp. Chicken soup base

 

1 tsp. dried minced rosemary leaves or 1 Tbsp. fresh

 

1 Tbsp. LITEHOUSE poultry herbs

 

1/2 tsp. pepper

 

Cut chicken breasts into 1 1/2 inch pieces. Flour pieces and slightly brown in oil. Place in small roaster. Add all the prepared vegetables. In a small bowl mix the remaining ingredients. Add to the roaster and mix in. Place in a 350°oven and bake for 1 1/2 -2 hours or until veggies are cooked.

 

Rosemary Biscuits

These biscuits go well with the above recipe.

 

1 cup white flour

1 cup whole wheat or spelt flour

1 Tbsp. chicken soup base

2 tsp. baking powder

1 tsp. baking soda

2 tsp. dried crumbled rosemary leaves or 2 Tbsp. fresh, chopped

1/3 cup butter

3/4 cup buttermilk

1 tsp. or more of LITEHOUSE poultry herb

 

In a bowl mix the flours, soup base, baking powder, soda and rosemary. Cut the butter into the flour until crumbly. Stir in the buttermilk gently to form a soft dough. Turn out on a floured surface and pat into a circle about 1 1/2 inch thick. Top with LITEHOUSE poultry herb and gently pat on. Cut into halve and cut each halve into 4-5 pieces. Bake in a preheated 400° oven for 12-15 minutes or until evenly browned.
